The Original Bellini In 1948, Giuseppe Cipriani, inspired by Venetian painter Giovanni Bellini, concocted a pink, fruity drink using his most favorite fruit. Little did he know the impact it would make on the world of cocktails.
Peaches were in abundance throughout Italy from June through September, and Giuseppe had a fondness for the white ones. He wondered if there was a way to transform the magic fragrance and taste into a drink that he could offer at Harry's Bar. He experimented by pureeing the small white peaches and adding some Prosecco. Those who tested this new beverage gave it rave reviews, and he was encouraged to pursue his alchemy. He named it Bellini and from that day on the drink became part of Harry's Bar and all Cipriani restaurants around the world.
